A good breakfast, a light lunch or a quick evening by the open window: this avocado toast lives from a few clear ingredients. Ripe avocado, lemon, olive oil and a final pinch of Flor de Sal bring freshness, texture and a little southern sunshine to the bread.
Ingredients
- 2 large slices of sourdough bread
- 1 ripe avocado
- 1/2 unwaxed lemon
- 2 tbsp extra virgin olive oil
- 1 small handful basil or flat-leaf parsley
- a few cherry tomatoes, optional
- jaramari Flor de Sal with Mediterranean herbs
Method
- Toast the bread until golden brown.
- Roughly mash the avocado with a fork. Fold in lemon zest and a squeeze of lemon juice.
- Spread the avocado over the warm bread. Drizzle with olive oil and add halved cherry tomatoes if you like.
- Finish with herbs and Flor de Sal. Salt only at the very end so the delicate crystals remain noticeable.
The final touch
Flor de Sal is not a salt for the cooking pot. It is the moment just before serving: gently crisp, clear and precise. For this toast, Mediterranean herbs pair especially well with avocado and lemon.
